The World’s Best Triple Chip, Browned Butter Cookies (GF!)

For years, I thought wheat basically gave me life. I love to bake, and I love to eat all the gluten-filled things.  I am known for my creative recipes, and my Browned Butter Cookies have been a potluck staple for as long as I can remember.

So when my doctor told me I should limit my gluten consumption, it was like a punch to the gut. No bread? Only gluten free cookies?!? For now, I’ll spare you all the tears, but saying it was an adjustment would be an understatement.

Now, a year later, I still enjoy baking and sharing what I’ve made with my friends. Some recipes, like this one, still contain ALL the wheat in their original form. But I also find a slight thrill in trying to make things gluten free.

If there are any other gluten-free friends out there, this recipe is easily adaptable, and equally delicious. You can use any cup for cup flour exchange.  I also recommend adding an extra tablespoon of cream cheese to help make these Gluten Free Cookies amazing. However, for the sake of this post, please know all the photos use wheat flour.

My favorite part of this recipe is the bag of Nestle Triple Chips. I typically have to buy one bag of white chips and one bag of semi-sweet chips for this recipe. And while I don’t mind having extra chocolate around the house, I loved being able to just dump the whole bag into the dough. We even get the extra flavor of some dark chocolate- yum!

Browned-Butter Triple-Chip Cookies

Ingredients:

1 cup of butter (two sticks)
1 tablespoon of cream cheese
1 cup of brown sugar
1/2 cup of white sugar
2 eggs and 1 egg yolk
1 teaspoon of vanilla extract
2 teaspoons of cream of tartar
2 teaspoons of baking soda
1 teaspoon of salt
2 1/2 cups all-purpose flour (or cup-for-cup GF Flour Substitute)
1 bag of Triple Chip Nestle Chocolate Chips (While these are not certified GF, they do not list barley or wheat derivatives as an ingredient. Do with that information what you will!)

*Gluten Free Cookie Variation: Add one extra tablespoon of cream cheese (2Tbs total)

Step One- Get the Browned-Butter Ready

First, plop your butter into a pan and melt. You’ll want to brown that buttah, which takes about 8 minutes. You will notice the nutty smell turns sweet. That’s when you want to turn off he heat! Watch closely, as you don’t want to burn.

I wish I could emit this smell from your screen, it’s like heaven. Or at least what I imagine heaven should smell like.

Pour into your mixing bowl and chill to room temperature. Browning the butter and chilling may seem like an unnecessary step to your typical chocolate chip cookie but I promise the extra depth of flavor is worth the extra steps!

Step Two- Mix It Up

In a separate bowl whisk together your dry ingredients- flour, baking soda, salt, and cream of tartar. Remember, if you are making gluten free cookies, you HAVE to use a gluten free flour substitute. All the other ingredients are considered wheat-free.

Once the butter is cooled, add it to a mixing bowl with the sugars, cream cheese, eggs, and vanilla. Cream the ingredients together for 1-2 minutes. Slowly stir in the dry ingredients, but just mix to combine. Don’t over blend.

Pour into your mixing bowl and chill to room temperature. Browning the butter and chilling may seem like an unnecessary step to your typical chocolate chip cookie but I promise the extra depth of flavor is worth the extra steps!

Step Three- Add the Triple Chips

Now, you can of course have your kids help you at any point (which both my girls love to do). But since these cookies are going to be gifts, I didn’t want to have any accidental egg shell pieces. I decided to have them help by adding in and mixing up the chocolate chips. They have fun, and there’s no extra mess, win-win! Use a spatula to gently fold the chips into the dough.

Pour into your mixing bowl and chill to room temperature. Browning the butter and chilling may seem like an unnecessary step to your typical chocolate chip cookie but I promise the extra depth of flavor is worth the extra steps!

Step Four- Chill Your Browned-Butter Cookie Dough

Now for an important step, try not to eat ALL the dough. Trust me, you will want to, but your cookies will be just as good. Since we melted the butter, it needs to chill so your cookies won’t spread. You can chill for a minimum of one hour, but even overnight is okay. Some times I roll into balls and then freeze.

Step Five- Bake Your Gluten Free Cookies (Or Your Regular Ones!)

Once the dough is fully chilled,  you can use a small scoop or take a spoon and ball the dough into 12 small cookies on a parchment lined cookie sheet. In a preheated, 350 degree oven, bake your cookies for 9-11 minutes. Not only will they make your house smell delicious, but they will be chewy, gooey, melt-in-your-mouth amazing! Enjoy!

  1. Melt the butter in a sauce pan, and cook over low heat for about 8 minutes.  Watch it closely, as the butter’s smell will change from nutty to sweet.  When this happens, remove your pan from the heat immediately to avoid burning. Allow to cool.
  2. Whisk together your dry ingredients in a small bowl. Set aside.
  3. When the butter is cooled, add the butter, sugars, cream cheese, eggs, and vanilla into a large mixing bowl. Cream the ingredients together for 1-2 minutes.
  4. Slowly mix in the dry ingredients until just combined. Do not over stir!
  5. Fold in the Triple Chips using a spatula.
  6. Chill the dough in the fridge. The minimum is one hour, but overnight is fine, too.
  7. Form the dough into 12 balls.  Place on a parchment lined cookie sheet, and bake at 350 degrees for 9-11 minutes.
  8. Enjoy!
